Call of duty black ops how to change multiplayer options

How do you change the multiplayer settings for offline splitscreen play such as time limit, score, etc. For offline Split-screen you cannot change the settings for a game. However, you have everything unlocked and all Perks pro, which is a nice bonus.

You are stuck with the usual online settings, usually ten minute games or first to however many points. You can change the settings if you go on xbox live and update the game.
